Yields 10 guests
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Citrus Syrup: Put all the ingredients into a pot, bring to a simmer, stirring until the sugar dissolves. Then, take off the burner and leave to cool entirely. Pour into a sealable bottle, seal keeping it in the fridge, where it will keep for about four weeks.
To make Batch Mix: Mix the specified liquid ingredients into a big jug, leave to sit for 60 minutes, then strain best through muslin, to ensure it's fully clarified.
To serve: Measure 85ml from the cocktail base to a stirring glass filled with ice, and stir lightly for one minute until cold. Pour to a cold coupe glass or equivalent, top with a few cranberries and finish by giving it a brief mist of mandarin oil above the glass.
